Did you know that the fruit of the cacao tree is called the pod (or Cabossa) and is made up of three main parts: 50% THE SHELL: Used as a natural fertilizer for cacao plantations 25% THE PULP: Sweet and rich in nutrients, this is where the juice for our Cacao Pulp comes from 25% THE SEEDS: These must undergo fermentation, sun drying, and other processing stages before becoming chocolate. Immediately after harvest, for the fermentation stage of the cacao seeds (also known as “beans”), 25% of the pulp present in the pod is used—the remaining 75% is usually discarded. Yet, this pulp—typically consumed only locally by cacao farmers—can actually yield a delicious, naturally sweet juice that doesn’t taste like chocolate but rather like an exotic fruit. Removing part of the excess pulp also makes the fermentation process 1–2 days faster than traditional methods.The juice we use comes from pods originating in Ghana, the world’s second largest cacao-producing region. Its extraction relies on solar energy, making the process completely sustainable. This approach enhances sustainability by reducing food waste, speeding up fermentation, and creating a new natural, delicious, and previously unknown ingredient: cacao pulp.
